I use iDemo to record my iPhone on my computer screen. I've been asked this about 10 times, so I figured I'd post the answer here so people don't have to message me.

I've also been asked numerous times what program I use to record my screen in my videos. I use Screenflow (It is compatible with Lion). Not only does it record your screen in superb quality, but it is also a basic editing program.
