THAI STYLE MUSSELS
• 30 Fresh mussels
• 1 tbsp garlic, diced
• 1 tbsp shallots, diced
• 1 bottom lemongrass, julienne
• 2 tbsp cilantro, chopped
• 1 cup white wine
• salt and pepper
• yield 2 liters red curry coconut cream
• 1 tsp red curry paste
• 3 cans coconut milk
• 1 cup white wine
• 1 cup cilantro
• 1 tbsp garlic, diced
• 1 tbsp shallots, diced
• 1 tbsp lemon grass
• 1 ea lime
Saute mussels in canola oil for 1 minute.
Add garlic, shallots, and lemongrass.
Deglaze with white wine.
Add red curry-coconut cream and reduce by half.
Add cilantro and garnish with lemongrass and julienne red bell peppers.
Red Curry Coconut Cream
Saute garlic, shallots and lemon grass in canola oil.
Deglaze with white wine.
Add all other ingredients and simmer until reduce by half.
Strain through a china cap. -
