    Make the Enchilada Sauce:
    Ingredients
    5 Guajillo chilies
    1/2 cup water
    2 Roma tomatoes (1/2 pound)
    1 clove garlic
    1/2 cup diced onion
    1/2 teaspoon salt
    4 teaspoons apple cider vinegar
    1/4 cup vegetable oil
    Instructions
    Break the stems off the chilies and shake the seeds out. Tear them up in to strips and boil with the 1/2 cup water until the water is gone -- about 10 minutes.
    Quarter the tomatoes and toss into a blender with the cooked chilies, onion, garlic, salt , and vinegar. Whizz thoroughly.
    Heat the oil in a shallow pan until very warm.
    Add the sauce carefully (watch for splattering) and stir with a spoon or whisk to combine the sauce with the oil.
    Now the sauce is ready to use!

    For the enchilada recipe:
    Ingredients
    1 1/2 cups of enchilada sauce (recipe above, or canned if you insist)
    12 corn tortillas (better have a couple extras in case of breakage)
    8 ounces cheese, grated (Cheddar, Monterey Jack, or Colby- Jack)
    1 cup diced onion
    Instructions
    If you haven't done so already, heat the sauce in a skillet until warm. Keep it over a low heat while you roll the tortillas.
    Dip a tortilla into the sauce, flipping it to coat both sides, and letting it soak just a few seconds to soften it.
    Carefully lift out with tongs and put on a plate.
    Sprinkle about 2 tablespoons of cheese and a few onion bits along the center of the tortilla.
    Roll up and place in a 9×13″ baking pan. Don't worry too much if they crack a little while rolling, just let them get a little softer next time. If they are tearing when you try to pick them up, then you are letting them get too soft. You'll get the hang of it after the second or third one. We're going to cover them with more sauce and cheese though, so all mistakes will be hidden.
    Roll up all 12 tortillas and place in the pan. You will probably have to line up the first 8 in the long direction of the pan and then squeeze the last 4 in along the side. You'll work it out.
    Spread the remaining sauce and cheese over the top.
    Bake at 350 for just about 10 minutes to melt all the cheese (or just stick it in the microwave for a couple minutes)
    Top with remaining diced onion.

    HOW TO MAKE FLAN

    Ingredients
    * 3 eggs
    * 4 ounces (half an 8 ounce block) cream cheese
    * 1/2 cup sugar
    * 1/2 cup milk
    * 1/2 cup evaporated milk
    * 2 teaspoons vanilla

    Caramel:
    * 1/2 cup sugar

    Instructions

    Beat the eggs, cream cheese, and sugar together, gradually increasing speed to high and beat for one minute.

    Slowly add the milk and vanilla and mix until incorporated. Set aside.

    To make the caramel: put the 1/2 cup sugar in a heavy skillet and turn on to medium-low heat. Cook, stirring frequently, for about two minutes or until the sugar begins to clump. Stir constantly now for another few minutes until it begins to melt. Reduce heat to low and stir constantly until it becomes liquid and golden, about 8-10 minutes more.

    Distribute caramel between 3-10 ounce ramekins or 4-8 ounce ramekins. Or if you are using an oven-safe skillet, you can bake the flan in that.

    Pour the custard mixture into the dishes, on top of the caramel.

    Place in a water bath and bake for 35 minutes to one hour or until mostly set.

    Remove from the water bath and invert onto serving plates while warm.

    Refrigerate and serve cold, or they may be served warm.

    NOTES

    I cut all measurements in half to suit my needs. The original recipe was as follows:

    * 6 eggs
    * 8 ounces cream cheese
    * 1 cup sugar
    * 1 cup milk
    * 1 cup evaporated milk
    * 1 tablespoon vanilla

    How To Make Frozen Sangria

    Ingredients

    * 2 cups red wine
    * 1 cup frozen fruit (peaches, cherries, strawberries, and mango are my faves)
    * 1 cup ice
    * 2 tablespoons lime juice
    * 2 tablespoons fruit liqueur

    Instructions

    * Pour the wine in a blender and add everything else on top of it.
    * Blend until smooth and foamy.
    * Drink it now, or put it in the freezer for 10 minutes to get slushier.

    INGREDIENTS

    * 4 poblano chiles
    * 8 ounces cheese (Asadero, Oaxaca, Monterey jack, Muenster)
    * 2 eggs
    * 1 teaspoon vegetable oil
    * 1/2 large onion, sliced thinly into half-circles
    * 1 clove garlic, minced
    * 4 cups tomato sauce (1 pound fresh tomatoes pureed, or canned sauce)
    * 1 bay leaf
    * Salt and Pepper
    * Oil for frying (about a 1/2″ deep, 2-3 cups of oil)

    INSTRUCTIONS

    Wash the peppers well. Roast the peppers over an open flame or under the broiler for about 2 minutes on each side until thoroughly blackened. As each is roasted, place in a large bowl and cover them with a plate. Let them steam together in their own heat while you begin the sauce.

    Heat the teaspoon of oil in a saucepan and saute the onions over medium heat for about 5 minutes or until softened and beginning to brown. Add the garlic, tomato, and bay leaf. Stir. Salt and pepper to taste. Bring to boil, then simmer while you prepare the chiles.

    By now the peppers should be well-steamed and soft. Gently rub the blackened skins off with a paper towel, you don't want to tear the pepper.
    Cut a slit from the stem end down about 2/3 of the way. Use a paring knife to cut out the little cone of seeds under the stem, or leave it in if you like it spicy!

    Cut the cheese into 16 rectangles and put two in each pepper. Set aside.
    Separate the eggs: whites in a mixing bowl, yolks in a shallow bowl. Lightly beat the yolks. Beat the whites until stiff. Fold the egg whites into the yolks gently to create a fluffy "batter".

    Heat the oil in a large skillet until a pepper seed sizzles when tossed in.
    Lay a filled pepper into the egg batter, cut side up, and spoon the egg over the top to cover it. Lay it carefully in the hot oil and repeat with the other peppers.

    Fry them for 2-3 minutes on each side until golden brown.
    Drain briefly, then serve immediately with the tomato sauce, rice and beans, or lettuce and tomato salad.

    Notes
    If you are multiplying this recipe and need to hold the peppers after frying, lay them on a rack on a cookie sheet and keep warm in a 200 degree F oven for up to 15 minutes.

    Chiles rellenos may also be filled with beef picadillo or shredded chicken.

    How To Make Crispy Beef Tacos

    INGREDIENTS

    * 8 corn tortillas
    * Cooking oil spray or vegetable oil and a basting brush
    * 1/2 cup diced onion
    * 1 teaspoon cumin seed (or 1/2 teaspoon ground cumin)
    * 1 tablespoon chili powder
    * 1 jalapeno, minced
    * 2 cloves garlic, minced (2 teaspoons)
    * 1/2 teaspoon crushed red pepper (optional)
    * 1 pound lean ground beef
    * 1/2 cup water, beer, or beef stock
    * 1 teaspoon dried oregano
    * 1/4 teaspoon salt

    For serving: shredded cheese, lettuce, tomato, sour cream, avocado, salsa

    INSTRUCTIONS

    Make the tortilla shells:
    Preheat oven to 375 F. Sprinkle the tortillas with a little water and microwave for 30 seconds or so to soften. Spray or brush lightly with oil.

    Lay each tortilla over 2 oven rack bars. Bake for 9 minutes, then remove tortillas from bars and set upright on a baking sheet. Place the baking sheet back in the oven and turn oven OFF while you make the filling.

    Of course you may use store-bought crispy taco shells, or even flour tortillas for soft tacos, which would be safer if you have small children. Choking! Ahogo!

    Also, you will probably have enough beef mixture for 10 tacos, actually, but 8 is how many tortillas will fit easily in most ovens. You could of course bake more in cycles. Or use leftover taco filling for a taco salad the next day.

    INGREDIENTS

    2 cups all-purpose flour (plus about 1/2 -3/4 cup more for kneading)
    1 1/2 teaspoons baking powder
    1/2 teaspoon salt
    2 Tablespoons oil
    3/4 cup milk, room temperature
    Instructions

    INSTRUCTIONS

    Combine dry ingredients well. Add oil and milk and mix to form a soft dough. Turn dough lump out onto a floured board and knead for two minutes.

    Divide the dough into 8-12 equally sized balls.

    On a lightly floured surface, pat each ball out flat to start it, then with your floured rolling pin, roll into a circle (or as close as you can get it) about 8 inches in diameter.

    Turn your cast iron skillet or griddle on high heat. Let it heat up while you continue to roll out tortillas. When it's hot, throw a tortilla on there. After about a minute it will start to grow bubble-warts. When those bubbles have almost covered the whole surface of the tortilla, flip it over for another thirty seconds or so. Put it on a plate and do that with the rest of your dough discs.

    And THAT is how you do it.

    Recipe

    For the fish:

    1 lb any white fish (tilapia, cod, even shark!)
    1 teaspoon ground cumin
    1/4 t anise seed, crushed
    1/2 t black pepper, crushed
    1/2 t chili powder
    1/2 t salt
    1/4 cup (heaped, not leveled) cornmeal
    2 T vegetable oil (might need 3 to coat a large skillet)
    For the toppin':

    2 cups thinly sliced cabbage
    1/3 cup diced onion
    1/4 c chopped cilantro
    1/2 jalapeno, minced (use more if you want it hotter; remove seeds if you want it less hotter)
    1 lime (should give you about 2 tablespoons)
    1 t salt
    1-2 T mayonnaise (start with one, add more if you feel like it)
    For fish: Combine spices and cornmeal. Cut fish into 8 even-sized pieces and roll in cornmeal mixture. Set it aside while you make the toppin' and the cornmeal will adhere better when you cook it. When you're ready to cook: Heat your skillet up real good on high heat and add the oil. Let that heat up a minute. Put in the fish and let it set still for about 3 minutes. When you can lift it easily and it doesn't stick, flip it and turn your heat down to medium-high. Cook another 3 minutes until you cut one open and it's not raw, it should be opaque white, not transluscent pink-white.

    For toppin': Combine vegetables with lime juice and salt. Mix it up good. Add mayonnaise right before serving.

    Heat up tortillas on the stove. I like corn. You might like flour. If your tortillas are kinda dried out, sprinkle a little water on them and then heat them up.

    Eat em.

    INGREDIENTS

    • 3 guajillo chiles
    • 1 ancho chile
    • 1 c pineapple juice
    • 1 tablespoon vinegar
    • 1 teaspoon each: cinnamon, oregano, black pepper, salt
    • 1/2 cup chopped onion
    • 5 cloves garlic
    • 1/2 teaspoon achiote (annatto) powder

    Rehydrate the peppers in hot water to cover. Remove stems and seeds. Put them in a blender with everything else. Whizz it until it's smooth.

    Pour over 2-3 pounds boneless pork and cook it one of three ways:

    Crock pot: put the whole roast and marinade in there and cook on low for 8 hours until it's falling apart. Add some pineapple chunks in the last hour.

    Grill: slice the meat thinly, marinate up to 4 hours and grill it with fresh pineapple spears.

    Bake: marinate whole roast up to 24 hours and roast at 350 degrees F, covered, until tender. Shred it, add pineapple chunks and stick it under the broiler for a few minutes to crispy it up.

    FOR THE MASA * 2 c instant corn masa flour * 1 1/2-2 c warm water or broth * 1/2 t salt * 1/3 c coconut oil (softened), lard, shortening, or vegetable oil * 1 t chili powder * 20-24 dried cornhusks, rehydrated in boiling water for 20 minutes * 2 cups of your filling of choice (see options below)

    In a mixing bowl, beat the fat component on high speed to whip it up (skip this if using liquid vegetable oil). Add the masa flour and about a cup of the water. Add another 1/2 -- 1 cup water to make a soft, moist dough. Add the salt and chili powder.

    TO ASSEMBLE:

    Pull out a cornhusk and lay it down, smoothest side up, and the pointier end towards you. Put about 2 T masa dough on the husk and pat it out very thin. Put about 2 T filling in a line down the middle of the masa. Roll it up, using the husk to form it into a little log. Fold over one side of the husk, then fold the bottom up and roll over the rest of the husk. Tie it closed with a thin strip of another husk if you like. It does look cute that way. Roll up a bunch more tamales that way. You'll get about 16 tamales from this recipe.

    TO COOK:

    Set up a steamer basket in a large pot. Lay some husks over the bottom of the steamer, sit the tamales upright in the pot, cover with another layer of husks. Put a tight lid on it. Steam for about and hour and a half, adding water if necessary. You can leave them in the steamer for longer if you need to keep warm. Eat them all now, or refrigerate and reheat by steaming again.

    Filling ideas: Make sure to taste the filling before making tamales. It should be well-seasoned because the masa itself is very mildly flavored.

    PORK FILLING * 2 c cooked, shredded pork roast (you could also use chicken here) * 1 ancho chile, soaked in boiling water 5 minutes, stem removed * 2 c water * 1 t oregano * 1/2 t ground cumin * 1/2 t salt * 1 jalapeno, minced * 1 T garlic

    Put the ancho chile, water, and spices in a blender and whizz around until smooth. Put in a small pot with the shredded pork and simmer about 20 minutes until the water is absorbed or evaporated. Taste for salt and spice.

    VEGAN BEAN FILLING * 1 c cooked pinto or black beans * 1 c corn * 1/2 c diced tomato * 1 jalapeno, minced * 1 T oil * 1 t oregano * Salt to taste (depends on your beans)

    Drain liquid from beans and saute with corn, tomato, and jalapeno in the oil for five minutes, mashing the beans slightly. Add oregano and salt to your liking.

    INGREDIENTS

    * 5 Roma tomatoes -- seeded. (peel them if you want to, but that's a lot of work and this is supposed to be easy)
    * 1/4 cup chopped onion
    * 1 clove garlic, mashed
    * 1-2 jalapenos (cut out membranes and seeds for less hotness)
    * 2-4 T lime juice (start with 2 and add more if you want to after tasting)
    * 1/2 t salt
    * 1/4 c cilantro

    INSTRUCTIONS

    Combine tomatoes, onion, garlic, jalapeno, lime juice and salt in a blender and whirl it around until it's smooth. Taste to adjust for lime juice and salt. Pour into a bowl and mix in cilatro. Set aside for an hour in the fridgerator to let the flavors blend and the consistency equilibrate. WTF does that even mean? Sorry. J/K.

    Mexican Hotdogs Ingredients:
    1 hot dog
    1 slice bacon
    1 hot dog bun or small French-style roll
    Choose any or all of these condiments:
    Mayonnaise, Mustard, Ketchup
    Salsa Verde
    Pico de Gallo
    Refried beans
    Grilled onions and/or jalapenos
    Pickled jalapenos
    Fresh diced onion
    Sliced radishes, tomatoes, cucumber

    How to make mexican hotdogs
    Starting at one end of the dawg, wrap the bacon around in it a spiral.
    Put it in a skillet and fry it over medium-high heat, turning as each side browns to get it all brown and crispy all over.*
    Toast the bun (or just heat it up in the microwave for a couple seconds).
    Slap on your mayo, mustard, and/or ketchup and any other toppings you want!
    Enjoy with an icy cold Bud Light (or a Coke, fine!)
    *If you want to grill these outdoors, use toothpicks to hold the bacon on while cooking. Remember to take them out before you serve them!

    Guacamole INGREDIENTS

    • 2 Hass avocados or 1 Fuerte
    • 1 lime (about 2 tablespoons of lime juice)
    • 1 jalapeno or serrano pepper, minced (seeded for less heat)
    • 1/4 cup minced cilantro
    • 1 clove garlic, minced
    • 1/2 teaspoon salt

    INSTRUCTIONS

    Hold the avocado in your palm, caressing it. Use a sharp knife to cut around it, longitudinally, to create two symmetrical halves.

    Twist the halves apart and use your knife to knock the pit out of whatever half it is stuck in.

    Scoop out the avocado guts with a spoon or just squeeze them out like I do.

    Squeeze the lime all over the avocado guts.

    Mash the avocado all up with a fork.

    Add the other stuff.

    Give it a whirl and add some more lime juice or salt if you think it needs it.

    INGREDIENTS:

    • 2 tablespoons vegetable oil (or lard for more traditional beans)
    • 1 clove garlic, minced
    • 2 cups cooked beans (pinto or black beans are preferred)
    • water or bean-cooking liquid
    • salt

    INSTRUCTIONS:

    Sauté the garlic in the oil or lard for a few seconds over medium-low heat. Add some of the beans and mash them up. A potato masher works, but so does a big metal spoon. Add some more beans, mashing after each installment. Add about ¼ cup of their cooking liquid (or water if you're using canned beans) if they seem dry. Keep stirring and mashing, adding more liquid if necessary, until you have a big, steaming skillet of fairly smooth, well-fried beans. It should be about the consistency of mashed potatoes or a little thinner. Add salt if it needs it and some oregano if you're feeling it.

    Chicken Tortilla Soup Recipe
    Ingredients

    1 fresh tomato, chopped
    1 cup chopped onion (about 1/2 a large onion)
    3 cloves garlic
    1 1/2 teaspoons dried oregano
    1/2 teaspoon dried thyme
    1 guajillo chili (or 1 teaspoon chili powder)
    1/2 teaspoon vegetable oil
    4 cups chicken stock
    1/2 teaspoon salt
    3 cups cooked shredded chicken (or turkey)
    1 cup sliced carrots and celery, each
    1 zucchini, cut into thick half-circles
    1/2 cup poblano pepper, diced
    1/2 cup chopped cilantro
    For serving: tortilla strips, avocado, cheese, sour cream, diced onion, Spanish rice, lime wedges

    Instructions for chicken tortilla soup

    Toast the guajillo pepper over a flame or a dry skillet for a few seconds.
    Combine tomato, onion, garlic, spices, chile in a blender with a little water - maybe 1/2 cup - to make a smooth paste.
    Heat 1/2 teaspoon oil in a large stockpot over medium heat and add tomato sauce. Cook for about 5 minutes, until it turns a darker shade of red.
    Add chicken stock, salt, chicken, and carrots, celery, zucchini, and poblano.
    Cover and bring to a boil, reduce heat and simmer 20 minutes until vegetables are tender.
    Add a handful of tortillas strips and simmer a minute longer to thicken the soup.
    Add cilantro.
    Serve topped with tortilla strips and whatever other garnishes you like. (But lime wedges are very important!)

    To make fat-free tortilla strips: slice corn tortillas into 1/4" strips and put in a single layer on a baking sheet. Bake at 300 degrees F for about 15 minutes, shaking every 5 minutes, until dry and crispy.

    To make this recipe with fresh chicken, poach two boneless, skinless chicken breast halves in the broth mixture for 10 minutes before adding vegetables. Remove and let cool, then shred. Recombine in the pot with the vegetables and continue as directed.

    To make vegetarian tortilla soup, substitute a cup or two of cooked black or pinto beans for the chicken.

    Other vegetables you might like in this are green beans, cabbage, and corn.

    Verde Sauce Ingredients

    Recipe: Green Enchilada Sauce

    Ingredients

    1 1/2 pounds tomatillos, husked and rinsed
    1-2 serrano peppers
    3 cloves garlic
    1/2 cup diced onion
    1 cup cilantro, leaves and stems
    1/4 teaspoon salt

    Chicken Enchiladas Ingredients:

    Summary: Chicken Enchiladas with Tomatillo Sauce

    Ingredients

    1 pound boneless, skinless chicken breast
    1/2 teaspoon dried oregano
    1/4 teaspoon each salt and pepper
    1/2 cup diced onion
    3 cups green tomatillo enchilada sauce (from above recipe)
    12 corn tortillas
    1/2 cup grated white cheese
    1/2 cup sour cream (optional)
    Instructions

    First poach the chicken: Put it in a pot with just enough water to cover it. Add some salt and pepper. Cover and turn heat to medium-high. Bring to low boil, then reduce heat and simmer 5 minutes. Turn off heat and let chicken sit in hot water for another 5-10 minutes. This method of poaching prevents the chicken from getting tough.
    Remove the chicken from the water and let cool slightly then shred using 2 forks. Sprinkle with oregano, salt and pepper and set aside.
    Sprinkle a few drops of water on each tortilla then heat them in the microwave 30 seconds. Flip the stack and heat again 30 more seconds or until they are soft and pliable.
    Pour about half the sauce into the bottom of a 9x13" pan.
    Dip each tortilla into the sauce, then fill with a couple tablespoons of chicken, a little diced onion, and roll up.
    Once all the enchiladas are rolled, pour the remaining sauce over the top and sprinkle with cheese.
    Bake at 350 for about 15 minutes to melt the cheese (or microwave).
    Quick notes

    Chicken breast is common in Tex-Mex restaurants, but dark meat can be used just as well.

    Variations

    For Sour Cream Enchiladas:
    After rolling the enchiladas, combine the 1/2 cup sour cream with the remaining sauce and pour over top. Sprinkle with cheese and continue.

    How to make Huevos Rancheros
    Ingredients
    1 teaspoon oil
    1/4 cup finely chopped onion
    1 jalapeno, chopped (and seeded if you like)
    1 clove garlic, minced
    1/4 teaspoon ground cumin
    2 cups chopped tomatoes (fresh or canned)
    Salt and pepper to taste
    1-2 teaspoons butter
    2-4 eggs
    2-4 corn tortillas
    Refried beans and cilantro for serving
    Optional: cheese, avocado,
    Instructions
    Toast the corn tortillas under the broiler on low heat for 1-2 minutes on each side until crisp, or bake in the oven at 350 for 5-10 minutes until crisp. Set aside.
    Heat the oil in a skillet large enough to hold however many eggs you want.
    Saute the onion, jalapeno, and garlic for a few minutes to soften.
    Add the cumin and fry 30 more seconds.
    Add the tomatoes and some salt and pepper.
    Cover the skillet and reduce heat to medium-low. Simmer 5 minutes until the tomatoes are soft. You may need to add a couple tablespoons of water to make a sauce if your tomatoes were not very juicy.
    Remove the lid and make a little well or hole in the sauce for each egg you are cooking.
    Drop a half-teaspoon of butter in each well and then crack an egg into each.
    Reduce the heat to low and cover the pan. Cook the eggs for 5 minutes or until done to your liking. If you'd like the yolks well-done, pop the pan under the broiler for a minute.
    Spread about 1/4-1/3 cup refried beans on each tostada, then top with an egg and some of the sauce.
    Sprinkle with cilantro and cheese if you want.
    Yummy!!

    Shortcut: substitute 2 cups premade salsa for the vegetables.

    Black bean soup Ingredients

    * 1/2 pound (1 cup) dried black beans
    * 1 tablespoon oil
    * 1 cup diced onion (about 1 medium onion)
    * 1/4 cup diced jalapeno or bell pepper
    * 2 tablespoons minced garlic
    * 1 teaspoon ground cumin
    * 2 teaspoons dried oregano
    * 1 teaspoon ground coriander
    * 1/4 teaspoon ground allspice
    * 1/4 cup fresh chopped cilantro leaves and stems (plus more for garnish)
    * 1 1/2 teaspoons salt (or more, to taste)
    * 1 cup diced carrot (about 1 large carrot)
    * 2 tablespoons fresh orange juice
    * 2 tablespoons fresh lime juice

    For serving: sour cream, diced onion, cilantro, lime wedges

    Instructions for soup

    Sort beans, discarding any rocks, and cover with 3 cups water. Allow to soak overnight, then drain and rinse.
    Heat oil in a large pot over medium-high heat.
    Saute onion and jalapeno for 5 minutes or until softened and beginning to brown.
    Add garlic, cumin, oregano, coriander, and allspice and fry 30 seconds.
    Add drained beans, 4 cups of water, and cilantro.
    Turn heat to high and bring to boil.
    Cover and reduce heat to low and simmer 1 hour.
    Check beans for doneness. You may need to cook them another 30 minutes to an hour depending on the age of the beans. If it seems dry, add another cup of water.
    Once beans are cooked very soft, add salt.
    Blend half the soup to a puree with an immersion blender if a creamy soup is what you want.
    Add the carrot and simmer, uncovered, another 20-30 minutes until the carrots are soft.
    Serve with garnishes. This can also be served over rice for a heartier meal.
