Corn Bread Cuties
(1) 2 beaten eggs;
(2) 1/4 cup of melted butter (= 4 Tablespoons) - (mix together until fluffy with mixer);
(3) 1 cup reduced fat sour cream - (mix together until fluffy with mixer);
(4) 1 tablespoon honey -(mix together with mixer);
(5) 2 packages Jiffy corn muffin mix (mix together with mixer);
(6) 1 can of whole corn (drain) -(hand mix together);
(7) 1 can of cream corn (hand mix together); and
(8) 1 7 oz. package of Sargento chipotle shredded cheddar cheese (or 8 oz of substitute cheese of your choice) - (hand mix together).
Fill muffin tins ¾ of the way -- to create individual portions (grease if necessary).
Bake at 350 degrees for 45 minutes or until tops are golden brown, whichever comes first.
