That's likely because not all games support SLI/Xfire at launch, leaving you with half a GPU sitting dumb, then there's poor driver support which may not come in till months after the games released. Even when it is supported micro-stutter is very common on multi GPU rigs, which is why its better to go with the highest single card solutions where possible... card like 590 and 6990 are still SLI/XFire cards so still have same issues mentioned despite looking like a single card.
