he should have covered that when the defender creature with 4/4 bloks, it deals 4 damage to the attacker still

If a creature with Defender has Strength, does it still deal combat damage?

Yes.

If a creature is a 1/5 with defender it means that it cant attack but when it blocks it will deal 1 damage to the creature it blocks.

Yes. follows normal combat rules.

Well it basically means that a creature cant attack, but often they have better stats.
