do you think this would work well with coconut milk instead of tomato paste? there is a filipino dish that i love that has butternut squash and shrimp cooked in coconut milk and i wondered if it would work the same way

@LauraVitalesKitchen I made this and i thought it was great! so i decided to do this for a class at school cuz we needed to make a soup featuring squash.. but my teacher said that, "Soups should not have any solid particles that you should bite." I was like What the HECK! so now i have a bad grade in class.. :( I still loved this soup though.. :)

Great soup! I had never heard of butternut squash soup made this way before. It was delicious. I used orzo pasta and served it in roasted acorn squash, which worked great. Thanks for a great fall/winter soup! (FYI I used half broth, half water.)

Laura, I just made this soup and it's divine! As you said we could, I used pumpkin instead of butternut squash, veggie broth instead of water, and several cherry tomatoes. The only real substitution was, instead of pasta, I put in the cup of cooked mixed beans I had to use up from my fridge. OMG it's such good soup! Thanks so much for this video and recipe! It's really hearty, and has such pretty colors, too. I think this is one of my new fall favorites.

@luvingg like sweet pumpkin....its great!! steam it with butter on top, like u would a corn on the cob, stew it like laura did or parboil it and grill it....it makes a great puree for baby food to....i grew up on it
