I'd actually say ALL the iron chefs (except maybe kobe) are very experienced and "real" chefs.. It's probably just that sakai and kenichi have been on icj longer, so you're more used to them, maybe
I believe Morimoto worked as an apprenctice chef under Michiba. That is why Morimoto refers to Michiba as "sensei." When Michiba retired as an Iron Chef, he nominated Morimoto to take his place. I think the past relationship between the two is discussed later in the episode.
Then Morimoto goes on to work on Iron Chef America, surpisingly. I guess he loved his job so much that he was willing to go to the US to continue... =/
Probably, but I do remember that Wolfgang Puck was originally one of the Iron Chefs of the American version, but decided to leave. So I guess Morimoto took over his position.
