  • Hi Maria ,  Recently I watched a video that reccomended using ground cinnamon along with kosher salt and fresh ground pepper . Then like you he gave it a light coating of olive oil. Have you ever tried the cinnamon ? I don't know what it does ,but it really turned out well . Thanks for sharing and by the way , you have the most beautiful hair on youtube . Keep em' coming and I'll keep watching.

  • Sometimes the purple color means it has not been exposed to oxygen, especially with game it can be a good sign. Bright, watery, mushy looking meat is bad. Another good vid, thanks.

  • I just turned 50 and all my life I would allways order my steak well done . I recently tried medium rare and can't believe what I was missing all these years . Still not willing to try a rare one, but I am amazed what a good steak tastes like when it is not completely incinerated . I think perhaps I didn't trust the chef to get it right and figured I would play it safe . Great job on the video, never thought of putting the steak in the oven before. Thanks for sharing !

    note: A t-bone and porterhouse are the same cut of meat, the porterhouse however comes from larger end of the loin (the bone is actually a portion of the vertibral column cut in half) The Strip steak and the filet minon actually make up a T-bone. This is why the small side of the T-bone tastes SOOO good. We used to butcher our own beef here in central MO.

  • I've been watching Maria's video's for 2 years now, she is a great chef, I have used many of her recipes and recommended them to friends who have also used them and love them.

    I have dogs who live inside, they walk around the kitchen even while I cook, I have never gotten sick from my kitchen.

  • I, like you, can not live without my cast iron. I cook my steaks in the cast iron skillet with NO OIL. I heat the pan and add some kosher salt to the pan not the steaks. sear the meat three and half minutes a side and let rest. No oven. I love the fact that there is many ways to cook a meal and that we all learn from each other. RE: the animals, I say screw those haters. Do what you want. I bet they kiss their animals, and animals lick their butts.

  • Personally I wouldn't use this exact method on chicken, especially breasts. They'd get too dry and tough cooked over high heat for too long. If I were doing chicken I'd heat the oil in the pan, brown quickly on each side, then lower the heat to cook the inside through, or place in a cooler oven, like 325F or so. Thighs have a bit more fat and flavor than breasts, so they are a bit more forgiving when it comes to overcooking.

While I feel my animals are as clean as people, I agree that the bottoms of their feet can carry gerns, and while I let the cat sit on the counter and watch while I cook, I do NOT prepare any food directly on the surface where the cat is sitting - I also constantly clean and disinfect my counters - I do not add the cat or dog to any of my dishes - Finally, - remember this is all virtual -

  • I have to voice a bit of disagreement here. Household pets are not as clean as people. People wander around town, through various environments, picking up all sorts of germs from many places. Pets have a restricted range of activity, they don't get out much, they are probably CLEANER than humans.

    I usually do some sort of simple pan reduction sauce when doing seared steaks on the stovetop.

  • When they get sick, you and they will see things differently. Take a food safety class, you'd be amazed at what one tiny germ can do.

  • remove it from the pan if you can, let it rest loosly tented in foil on a plate that will trap the juices that flow out - you can use this juice to deglaze the pan and make a simple sauce, or not. If you leave it in the pan it will continue to cook too much

  • A good tip also is to place a glass platter in the oven for a few minutes to warm up to put the steaks on to rest. The platter will not make them cool off to fast and will not continue to cook like the skillet will.

  • Maria is cooking in her own kitchen, eating her own food....her animals are part of the family & her hair is part of her body. This is not a cooking school demonstration and if you saw how some restaurants treat your food and what goes on behind closed doors you would be shocked.
