A larger lens would be awesome, but judging by the pictures in your video it seems like the electrostatic forces determine the wetting angle, and then the meniscus is formed by surface tension forces. These forces would not be able to sustain a much larger meniscus. Anyway, I'm looking forward to your experiments :-)
Not knowing this tech on its place, i imagine its applications in Cyborg technologies. Think if one loses his/her iris, planting this in its place would give that person a new one, maybe an improved range, i wonder.
Would be really interesting to see a lense the size of a window. Could you use it for privacy purposes instead of curtains, and just focus it when you want to see through it? Would that work or would it require focusing for each distance the other side of it too?

The trouble with upscaling these kind of lenses is that gravity will overcome the initial surface tension and adhesion to the surfaces of the device.
The lens does work on small scales exactly how you explained, the power of these forces won't grow linear when you upscale the lens.
So in short: the laws of Physics are not in your favor when you try to upscale these devices.
Still: a really cool lens, nice stuff to play with, with a lot of potential!

Variable focus liquid lenses have been around for a long time -- in fact, I have two of them. So do you! :)
Very cool project -- of course the technical hurdles are nothing compared to the hurdles from the company, etc...
I have a few ideas for your larger porthole lens...
