Like 15 years ago, I was in Mexico City for my job and I ate cow's brain in a restaurant. It wasn't like liver which toughens when it cooks. Brains, nervous tissue (nucleic acids, not protein), stays as is. So it was like hot jelly. And no flavor at all. Hot flavorless jelly. So they just put all kinds of spices in it. It wasn't disgusting, but it wasn't good either. The brain you have looks a lot better.
