I love sweet potatoes, but I tend to like them better fried, than cooked any other way. French fries, potato chips/crisps, or hash browns, they're just wonderful, but I don't care for sweet mashed potatoes.
They go really well with a dash of cayenne pepper (particularly the chips), and they're great with bacon, aged cheddar, and/or real maple syrup.
Hmmm...I bet some clever person could come up with a tasty recipe for a savory sweet potato pie that used bacon, cheddar, and maple syrup...
@amerein2006 I have a lovely, large electric wafflemaker, bought cheap and second hand. It was one of the old-fashioned metal ones. It made such lovely waffles. Then it broke and I had to throw it out. All the replacements I saw for it were just awful. They were small and didn't heat well. I'd like another old-fashioned one but they're so expensive. :`(
Gotta love W. That's what Alton calls her. I love how she and the security guard talk to each other. That and the music kind of give it a feel of espionage (sp?), as if they were secret agents.
I'm pretty sure it's just that sea salt is more expensive and I've read that when cooked it loses some of its flavor so it really would make much of a difference.
Because it's a flake instead of a granule (like your run of the mill table salt) it dissolves quicker. This means that you don't have to wait x number of minutes (for the salt to dissolve) to know whether you should ad more salt or if there is just enough. It's also has a cleaner taste than table salt, which is iodized...

i made the waffles once... they kinda turned out pretty dense, the texture wasnt quite right

I found that folding the egg whites in to vigorously makes them too dense.

more egg whites, incorporate slower

Alton ALWAYS uses Kosher salt where I see a lot of Chefs use Sea Salt... Wonder whats up with that.

He seems to think the syrup and nuts will mix with it reguardless of it's application. Can't say I've tried it though.

I would have never thought to put yogurt in sweet potato pie. My mom always put milk in hers. I guess yogurt is a less fatty substitute then milk.
