For educational purposes, I personally prefer when tutorial videos leave the vocals out. The singing, more often than not, will overlap the guitar notes, hampering one's ability to learn the strumming and handpicking. On the other hand, if you're viewing this video for enjoyment, then of course, singing would create a fuller performance.
