He's using an old SNES emulator, most likely Snes9x 142. The best emulator to run Star Fox SNES, is ZSNES 151, because it runs it at a slower speed, so you have more time to react. And it allows you to barrel roll alot easier.

You'll never get sucked into his mouth on the SNES version... you can try to boost into him and you still won't get sucked in! :)
