Hey guys when ever you have a question about meats and all that I can somehow help you all I have been a butcher for several years in mexico and i would like to help you all when you need it. i was just watching your videos and Im suprised that you guys are not like most of the people, grossed out by raw meat.... hahaha... and I have a secret Mexican recipe for mexican style sausage.
Tie the end, and put all the intestine all the way up on that foodprocessorbottom thing. Makes life much easier. Just twist, no need to tie. Twist enough and cut. They'll be good. I had to make tons of sausage back when I worked at a butchershop.
Boil before putting them on the grill to be certain they will be juicy and won't break.

That was REALLY interesting! It almost (ALMOST) makes me want to make my own sausage. Can I say almost again? :) I'm sure it tasted awesome!!
