I think he's trembling because he sees that Gian is sad about cutting his hair for religious or cultural reasons, and he realizes that he doesn't really want to cut his hair, so he feels guilty to be the one doing it. Gian noticed that and took the scissor from him so that he wouldn't feel guilty about it.
