Its not harmless fish have complex nevous systems and so feel pain and being put in liquid nitrogen for instant freezing would really hurt or even fuck up its nervous system its cruel and pointless.
No, the fish is dying. The freezing ruptures the cell membranes, and they cannot survive once thawed. The muscles work for a few minutes, but with ruptured cells, the cells cannot have any respiration, and they die.
The fish dies within minutes of 'coming back to life'.
This is completely unrelated to 'hypothermic stasis' (where metabolism slows down in a cold-water drowning situation).

There was one where some fish were fed pain killers but were still conscious (responsive to visual stimuli) and others were not given them. They were touched by hot wires, and only the ones without the pain killers acted distressed. I'm not claiming that they can feel suffering in any way close to humans, but they can feel physical pain to a point where torturing them for your amusement is unjust.
