sweet potato is so cute and sweet, never absorb too much oil, I love it. better 1000 times than french fries. also best for health and hungry. recommended.
oh.. we call "matang" as "camote cue" here in the philippines. "camote" means "sweet potato" and "cue" because they're usually sold in bamboo skewers! :D
can i use the orange sweet potatoes for the matang ( wont they turn all mushy) and is the sugar on the out side hard like candy or more like caramel when it cools ?_?

They had both yams and sweet potatoes, so I had to ask my mom to find out which ones were goguma. :P I think that yams(goguma) taste better than sweet potatoes. :)
@hushnow1 Goguma is different from American yam and sweet potato. Goguma have a red skin but a white interior. Yams have a red skin but orange interior. Sweet potato's have a yellowish brownish skin and are yellowish-white inside. That's why Maangchi says to find it in a Korean grocery store.

Hi Maangchi! For me,I didn't wait for the sugar to turn brown enough...it was just light brown and then I threw in the potatoes. It still turned out edible,but I guess next time I'll wait for the sugars to turn brown. Oh,and I think I manage to find the Korean kind of sweet potato in my country. However, there were a lot of little brown dots after I peeled the skin. But it is still white potato.

@wtakizawa It's very similar to daigakuimo, but this has a seemingly crunchier exterior than it. The Japanese dish usually has a stickier sauce on it, and the outside part is not quite as crunchy/ hardened. :]

When I was growing up, I remember one year I came home from school and my mother had a duck the legs were tied to a rope and she had it nailed above the kitchen sink so it was hanging upside down over the kitchen sink. She was marinating the duck, then cooked it in oven, it was great! I cannot find anywhere how to make it again.

Ahhhh! I was just trying to tell my husband about this dish tonight as we were having roasted sweet yams. go-gu-ma-tang is one of my favorite all time foods! Thank you for the recipe and the video! I was wondering how it was exactly made! YAY!!!!

@wtakizawa It's very similar to daigakuimo, but this has a seemingly crunchier exterior than it. The Japanese dish usually has a stickier sauce on it, and the outside part is not quite as crunchy/ hardened. :]

Hiya Maangchi! When I was growing up, I remember one year I came home from school and my mother had a duck the legs were tied to a rope and she had it nailed above the kitchen sink so it was hanging upside down over the kitchen sink. She was marinating the duck, then cooked it in oven, it was great! I cannot find anywhere how to make it again.

@pikaBOOchu Normal sweet potato will work well, too but for the candied sweet potato recipe, I think Korean sweet potato will turn out more fluffy. Let me know the result if you make it.
