  • Using a microwave, STOPS the fudge from being overheated & burning! You only get it hot enough so that the chips can be smoothly mixed, by stirring them with a big kitchen spoon. Do NOT microwave until they melt. They will actually begin to look wet (like they are sweating,) when they get warm enough to mix. using your microwave makes this fudge so EASY to make!!!! :-)

  • I do a very similar recipe, but in the microwave. :-) Place the chips in a glass mixing bowl, pour the liquids over the chips & stir to coat them all. Microwave for 1 minute, then for 10-15 seconds at a time, stirring between, until the mixture is hot enough to stir to a smooth finish. When smoothly mixed, you can add nuts, if you want them. By experimenting with various types of chips & flavorings, I have come up with some fantastic varieties of fudge! I always give it for Valentine's Day. :-)

  • Betty I have a really similar recipe, if you want to change it up sometime omit the last three ingredients and add 1 12oz jar of PB. Now you'll have PB fudge. I got this out of a newspaper clipping too.My family loves it. I'm definitely trying it your way too. It' looks yummy

  • Betty, I've followed some directions using a good candy thermometer, and found that after fudge reaches a boil, no one gives the range of time it takes to reach soft ball or 235 F degrees. I have burned two batches waiting for 235 degrees to happen, and it is taking longer than 30 minutes of unstirred boiling to get to 230 degrees! How long should it take to get to soft ball and how deep of saucepan should be used ? 4 inches? 8 inches? I do like the Magic recipe but sometimes want a boiled one.

  • @durgaaa It should not take 30 minutes; I would estimate more like 15 minutes. I would use a pot that is about 6 inches deep. I hope this helps!

  • I just made this for the first time, last night.

    Instead of using cooking spray, I smeared the inside of the baking pan with goats'-milk butter.

    And just before I put it in the fridge, I added some marshmallows that I'd also bought yesterday.

    Not the regular kind, though...

    I went to a local dessert-bakery, and bought a package that was made by hand (the kind that you have to keep refridgerated, because that's how it comes).

    It turned out awesome!

    And don't forget, the fresh ones taste way better than the ones that you can store in your cubboard.

    Also, if you can find them, try to the kind that don't have high-fructouse corn syrup in them (eating a lot of HFCS can cause diabetes, heart-disease, and cancer).

    The kind which I bought were sweetened with sugar-cane sugar instead.

    I still have quite a lot of them left in the fridge, and I'll probbably use them to make those Captain Crunch bars of yours.

    If you don't have any dessert-bakeries near you (locally-owned ones are ussually the best bet), Whole Foods will have them.

    By the way, What's the word for a bakery that only makes candy, pies, cakes, ice cream...ect. instead of bread, muffins...ect. ?

    On a slight tangent, I could use some advice about a different chocolate recippe...

    The other night, I was trying to make some chocolate truffles.

    The recippe called for 1/2 lb bittersweet chocolate, 1/2 lb semisweet chocolate, 1 cup heavy cream, 2 Tablespoons Grand Mariener liqueur, 1 Tablespoon prepared coffee, 1/2 teaspoon vanilla extract, some powdered sugar, and some sifted cocoa powder.

    The instructions told me, after preparing it, to leave it at room temperature for one hour, then spoon it onto a baking sheet to roll into balls (then roll the balls in the cocoa powder and powdered sugar).

    I followed the instructions to the letter (except for adding coffee; I hate coffee), but it wouldn't cogulate, so I couldn't roll it.

    I ended up with chocolate mousse instead.

    What do you think went wrong?

    "Chop the chocolates finly with a sharp knife and place in a heat-proof mixing bowl. Heat the cream in a small saucepan until it just boils. Turn off the heat and allow the cream to sit for 20 seconds. Pour the cream through a fine-meshed sieve onto chopped chocolate. With a wire wisk, slowly stir the cream and chocolates together until the chocolate is completly melted. Whisk in the liqueur (if using), coffee and vanilla."

    "Set aside at room-temperature for 1 hour. (everything was fine until this point) Using two teaspoons, spoon round balls of the chocolate mixture onto a baking sheet lined with parchment paper. Roll each ball of chocolate in your hands to make it roughly round. Roll in powdered sugar, cocoa powder, or both."

    What do you think could have gone wrong?

    Well, an interesting thing happened...

    I put the left-overs in the refrigerator after we had eaten some of it, and the next morning, it had completely coagulated.

    It had the consistancy of actual truffles, and a lot of the cream had risen to the surface, and apparently become coco-butter.

    I suspect that the problem was that the instructions callled for it to be cooled at room-temperature, when it should have said to put it in the fridge to cool.

    I got the recipe out of cookbook which was put together to raise funds for the local volunter fire-department in the town where we're vacationing.

    It's an anthology of recipes by various local people (some from local restraunt-owners).

  • @FamilyofPeople Yes, as long as the bowl is safe for high heat--like corningware or Pyrex or metal. You could also use a smaller pot over a larger pot.

  • Actually, for this recipe you should use 14 oz. sweetened condensed milk. If you don't have that amount, you can adjust all of the other amounts to be in proportion, and it will work!

  • You don't need a double boiler. Just melt the chocolate in a saucepan, but stir it continually, so that it doesn't stick. It will be great!
