Using a microwave, STOPS the fudge from being overheated & burning! You only get it hot enough so that the chips can be smoothly mixed, by stirring them with a big kitchen spoon. Do NOT microwave until they melt. They will actually begin to look wet (like they are sweating,) when they get warm enough to mix. using your microwave makes this fudge so EASY to make!!!! :-)

Betty, I've followed some directions using a good candy thermometer, and found that after fudge reaches a boil, no one gives the range of time it takes to reach soft ball or 235 F degrees. I have burned two batches waiting for 235 degrees to happen, and it is taking longer than 30 minutes of unstirred boiling to get to 230 degrees! How long should it take to get to soft ball and how deep of saucepan should be used ? 4 inches? 8 inches? I do like the Magic recipe but sometimes want a boiled one.
Instead of using cooking spray, I smeared the inside of the baking pan with goats'-milk butter.
And just before I put it in the fridge, I added some marshmallows that I'd also bought yesterday.

The instructions told me, after preparing it, to leave it at room temperature for one hour, then spoon it onto a baking sheet to roll into balls (then roll the balls in the cocoa powder and powdered sugar).
I followed the instructions to the letter (except for adding coffee; I hate coffee), but it wouldn't cogulate, so I couldn't roll it.
@SinnFein4ever I'm not familiar enough with the chocolate truffle recipe to say what went wrong. Maybe something was omitted or too much or too little.
"Chop the chocolates finly with a sharp knife and place in a heat-proof mixing bowl. Heat the cream in a small saucepan until it just boils. Turn off the heat and allow the cream to sit for 20 seconds. Pour the cream through a fine-meshed sieve onto chopped chocolate. With a wire wisk, slowly stir the cream and chocolates together until the chocolate is completly melted. Whisk in the liqueur (if using), coffee and vanilla."
"Set aside at room-temperature for 1 hour. (everything was fine until this point) Using two teaspoons, spoon round balls of the chocolate mixture onto a baking sheet lined with parchment paper. Roll each ball of chocolate in your hands to make it roughly round. Roll in powdered sugar, cocoa powder, or both."

It's an anthology of recipes by various local people (some from local restraunt-owners).

I have never made maple nut fudge. I would research it and make a version of it, but it might not be exactly the kind you have had and would be expecting.

@durgaaa It should not take 30 minutes; I would estimate more like 15 minutes. I would use a pot that is about 6 inches deep. I hope this helps!

Do we have to use a double boiler?
Can we melt normal chocolate and add the other ingredients?

You don't need a double boiler. Just melt the chocolate in a saucepan, but stir it continually, so that it doesn't stick. It will be great!

I made this in the microwave last year, and it was an incredible hit. I made a double batch for Christmas eve (yesterday) and literally had two 1" squares left!! Merry Christmas!

Wow, this is too easy. Thank you Betty. Will this work with any chocolate, like Dove Dark Chocolate? I am a chocoholic, BIG time. Another keeper added to my favorites.

I haven't tried this recipe with Dove Dark Chocolate, but I think it would be fine. I really love dark chocolate, and dark chocolate fudge sounds great!
