@Knejk The two easiest ways (other than practice and lots of waste) is to either cut it with extra left on and then file it down to size. Or use a bandsaw or coping saw.
You can measure out the design on both sides of the foam and cut in to it from each side. But the cutting larger than needed and filing/sanding/rasping it down to fit gives the best result.
I have a biiig sheet of foam. And ive done some terrain... but only smaller rubbles and such. Its really hard to cut nice thing of it.. What do u use to 'carve'? Woud love to make things like youve done ;O

Tools to use: - sharp hobby knife, coarse and med grade sandpaper (grit paper), and if you have them small wood rasps (wood file)

I get mine from Home Depot, but any building supplies type store that carries insulation should have some.
