Dehydrator: I have not used a dehydrator to make this. It would help make the carrot cake less "wet" once the cake has been made though. I love your idea of using mangos and pineapples. That will certainly taste amazing and you could use the dehydrator to dry out the fruit before adding or add the dried fruit to the icing which would also taste great. I can't advice you on the temperature though because I haven't tried it that way yet. Experiment with it and let me know how it turns out!

Walnuts: Yes, you can use walnuts, but walnuts are a little more acidic and may have a bit of a biting flavor. I love walnuts though and would suggest that for the first time you mix walnuts with another raw nut of your choice, such as raw pecans or raw almonds. Cashews are buttery and creamy and so it makes a smoother icing, but is certainly not necessary.
Hi, I have a question. I just got my dehydrator and am dying to make a carrot cake using pineapples and mangoes since the original carrot cake I baked required those two ingredients. But my question is if I make a carrot cake similar to the one you made, or just make this particular carrot cake, can I use my dehydrator and still get the same result? And if so, at what temperature should I set it in? Thanks!
You should use your plunger thingy that came with the vitamix! Makes things blend easier :)
