The most important change is that in Modern French, "oi" is pronounced "wah." In Renaissance French it was pronounced "way," so that it rhymed with "gai" (of all things!). See "Allons Gay" by AKlarman for the right pronunciation. The Chorale Not-en Bulles sings it this way.

(For example, "moi" was pronounced "mway," not "mwah," as in modern French, and thus rhymed with "gai," which it no longer does.)
