On a Mac, it's not shift-restore. It's Alt/Option-restore.

And you didn't mention you need SHSH Blobs for the respective firmware.

Plug your iDevice into your computer then hold the lock button for 3 seconds. Then both the home button and the lock button for 13 seconds. Then only the home button for 10 seconds. [YOU NEED TO BE ACCURATE. IF YOU CAN'T, TAKE A WATCH.]
