Nobody knows how to get the final Rabbid yet. The other two you get simply by doing a certain number of matches.

Any unlockables that weren't revealed pre-release?

Other than some unlockable alternate costumes, no.
A ROM dump of the game revealed that the roster of characters is all of the ones already revealed plus Raving Rabbid, Splinter Rabbid, and Ninja Rabbid.
As of this writing not all of the content has been unlocked because unlocking them requires codes that have not been released. The only known code was released by Ubisoft yesterday for Shredder and his alternate costume Cyber Shredder, but so far that's it.
