Yes, they are polytarps. We just bought cheap polytarps from a local shop - the sails cost $30 each and are cut to match the mast.
We have found some better polytarp too - which brings the cost up to about $50 but the sails keep their shape much longer.
We developed the sail shapes to match the masts over several weeks - we built four different masts and four different sails until we found the best match. Then we included the sail design and mast design in the plans.
