No Golden Syrup (As in Lyle's Golden Syrup) is NOT honey.

Honey is made by bees and is an invert enzyme sugar.

Golden Syrup is made from Sugar Cane and is not similar at all. It is not quite Corn Syrup or Molasses, and it is much richer, and controls the graininess of the sauce.

No it's basically evaporated sugar cane juice till its syrupy and golden in color, and basically somewhere in between a dark corn syrup and molasses popular in the UK, and pretty much nonexistent in the states here, except apparently in the south where it's used in Cajun/ Creole cooking =/

I met Nigella in 2003. She's warmish and gorgeous and a hint waxen in her beauty but it's obvious right away that she is a profoundly intelligent woman. Everyone was complimenting her on her TV show. Some mentioned her cookbooks. I mentioned her fabulous food writing, and she seemed to become even more human. Watch out though: her cooking is NOT quite for the health-minded. She reminds me of MFK Fisher, who took such pleasure in FOOD, love, AND writing about it.
