We do very rarely motoguy. I work for Whole Foods. Sometimes on holiday weekends we will bring in an Opah, a whole Tuna or something similar. I'm usually the lucky one who gets to process them.
I just filleted my first Opah last weekend. I did good too. Pulled the cheeks too. I heard the meat is kind of strong. I just ate top, and belly loins. Good job bra! Check my video out. Cooper fillets an Opah. By the way I live in Colorado. We flew that fish in.
that took about 30 seconds to cut out and was a big chunk of meat. i'm no scientist but i dont think 30 seconds is an incredibly long amount of time to spend on a good 3 pound piece of meat. just sayin...
@taylorgilligan1 Yeah, I was thinking the same thing. I think they were talking about the relative weight/yield vs. the labor and time spent to cut it.

You ain't kidding about the 35% off a 95 lb Opah. I ended up with 39 lb head and gut. I'm going to burry that under my garden.
