  • This might sound like a silly question but why do you strain the sauce? It looks so good coming out of the blender as is. Anyhow, than you for the recipe.

  • Ohhh now I see why! All the tiny ancho chili bits and even some chili veins were left on the strainer. Well I'm glad I followed the recipe now. lol

  • Hi Mary Ann, I really like your channel. Could you please show us how to make the orange colored enchilada sauce? I cant find the recipe anywhere. Here on the East coast the Mexican restaurants either serve the red or the orange colored sauce. The orange colored sauce tastes alot better to me. Thanks for posting these very helpful cooking videos.

I am hoping to make a trip into the city soon & hope to find them in Kensingston Market - which is a year round farmers market of intl vendors. Wish me luck. All my best. always

  • Can you tell me if you used the mexican oregano or the italian oregano & also, my 1 attempt at "toasting" chilis in a dry pan was a flop, they turned brittle black & smelled horrible, like they burned but the temp was at medium & it happened fairly quickly. Any details or advice for us first timers would be greatly appreciated! Maybe they are supposed to smell bad? LOL Thank you for all the great videos you make.

  • @meluv2cook Hi there! I used Mexican oregano for this. When I dry 'toast' my chilies I stand next to them and flip them often. They do smell strong as they blister but should not smell burnt. A little char is fine. Charcoal, not so much! I hope you give it another try! Have a wonderful day!

  • I always make my enchilada's fresh - however.. you're a genius! I was taught by my grandmother - who was taught by her mom and so on how to make them. And they always boiled the chili pods until they are soft. Problem with that is.. the whole house filled with spicy mace like air. LOL! My grandmother said it gave us lungs of steel. I've got to try your method and soak them rather than boil. ^_^

  • Thank you. I just bought some ancho chiles to make some pepper paste. Pablanos go bad so fast when they are fresh. And it is hard to find good ones every day. That looks delish.
