  • Something is wrong with this mixture. I did it exactly as stated and the taste was way heavy on the apple cider vinegar.

    The mixture calls for 1/2 cup of sugar, but if you pay close attention to this video, he uses 1 cup of sugar.

    I emailed BBQ PITBOYS but never got an answer........

    If you guys see this post, please help me. Are you SURE this recipe calls for 2 cups ACV and only 1/2 cup sugar??? Please advise. The ACV is overwhelming.

  • @77snyper77 I believe I had read some comments on other pages where people have brought up similar questions about ACV and they responded that they just really like Apple Cider Vinegar. But they also always say to adjust for your own taste and that BBQ is a matter of how you feel about stuff. So just cut it out or reduce it. If they do reply to your email I'm sure they will say it's all up to you.

  • Hmm, my recipe isn't too far off of this one. Cept a few minor differences.

    Tin of tomatoes, 1tsp chilli powder, onion granules, paprika, garlic powder, couple tsp of dark brown sugar. 2tsp Worcestershire sauce.

    Fry off a small onion, once it starts to caramel pour in the tomato / spices and let the lot simmer for a few minutes. Blitz the lot and viola.

    Everyone has their own take on the same recipe though.

  • @sugbearsam He did say in the vid you can adjust as you please based on your preference, so it wont necessarily ruin the sauce.

    Vinegar is usually quite common in most sauces, but I suppose you could try maybe using tabasco, or Franks Red hot sauce to give it some punch (but again, I think these are relatively vinegar based). Maybe get some liquid smoke, add that in, and increase the Cayenne and other spices to give it a fuller taste, and mask the lack of vinegar.

  • @thespleenfiend ...stewed, crushed tomato puree. Now season it -that's all ketchup is. The reason many competition pitmasters use Heinz is that all the prep work is already done(seasoning and slow simmer), has great tomato flavor, and makes a great base for building your own kickass sauce. Not all ketchup is the same so choose wisely!

  • I made some of this sauce the other day.

    I call it "awesome sauce". I used it as a marinade on some chicken drums and man did it work well. Absolutely delicious.

  • You should rinse out your Ketchup containers with some chicken stock, then dump that in the pot. Save the bottles and get a funnel and fill them with your sauce. Now ya got squeeze top BBQ sauce.

For people that love alot of sauce, wouldnt a fresh one be better? You take such care in your grilling, so why not finish with something that deserves to go on the meat?   • Ketchup I have seen used in every BBQ sauce recipe. This recipe sounds a lot better then another one that uses 2 ingredients I have never heard of on this site lol. Definitely want to make this sauce but will rpob make it on a smaller scale at first to balance it right.

  • I'm a highschool student who is preparing for a culinary school and in my opinion, I think that his sauce would just taste fine. the ratio of salt to the whole amount of sauce isn't that much..

  • White sugar works real well with chup and apple cider vinegar which has a sweetness on it's own,! Brown sugar changes the whole mix. Too sweet for the ingredients and will change the acidity balance that white sugar doesn't change. Don't be a white sugar hater folks.

  • This is the same sauce as their vodka BBQ sauce, only without the vodka. It's good, but try the vodka one it's outstanding. "It tastes guuuuud!" :)

  • I do my dry first and then my liquid second in my measuring cup. That way the dry does not stick to the wet cup.

  • @roosterinboro Try a restaurant supply store, but most stores that sell good cookware will have em, just make sure you season your pan. Rub a little veggie oil,and work it in with some paper towel, then pop it in the oven at 400 for 10 min, then let it cool, and wipe.

  • @roosterinboro some good places to find cast iron pans are at thrift stores, garage sales and antique stores. The good ones are expensive but well worth it.

  • this would can easily in a water bath. Do you ever can it and have it ready? I'll give it a shot, it's very acid so a water bath for about 10 minutes should can it perfectly

  • right on thanks a lot , i just made up a few jars of this sauce . I used tomato sauce instead of ketchup and added whiskey instead of apple cider viniger. Going to play with this recipe some more and mix in a few more spices.

  • I use just about every ingredient you guys do for the bbq sauce, only I use brown sugar. But either way it comes out good.

  • odd querery here...i work in a pizza place and we do have a BBQ pizza and a lot of tomato sauce. if i substitute our pizza sauce (already has a bit of oregano, garlic and basil in it)instead of ketchup, would that change the recipe considerably? i don't know what sort of spices ketchup already has in it.

  • used this recipe with a couple of baby goat legs i cooked in the smoker. Cheers went down a treat.

  • Very good base recipe.. Was a little more vinegary ?? than I had expected but dang good. I used about an extra cup of brown sugar, 1/8 cup of minced onion and it turned out fantastic. Like you said, great base to start with.. Thanks for the video.
