What would you say death metal sounds like? Slayer has many facets of death to their lyrics, they're always singing about the subject, whereas Anthrax and Metallica are more in the vein of insanity, doom, etc.

I wouldn't say I don't like death metal seeing how I don't really seem to understand what makes a death metal band, if Slayer isn't death metal. I guess I really need to check out more death metal music via Youtube.

Music changes indeed a bit in time, but that doesn't have to be a good thing, and I think metalcore/deathcore is a very good example for that.
