  • Do you think there is a difference weather you use a cast iron pot without enamel or with. I am looking to find the best pot to use for frying my fries. I have gone through 3 deep fryers and basically they suck.  I like the spider too.

  • I do not have a lot of experienc with the enamel coverd cast iron pots. They are cleaner and easier to maintain and they do supply even heat throughout the pan, but they do not get seasoned like the cast iron. Also, I wonder if frying in them would hurt the eanmel over time?

  • I think I am going to go with the enamel coated one, only because of the versatility I can get out of it, such as cooking with wines and tomatoes. I won't get that chemical reaction that way. I still have a couple of the non enamel frying pans if I need to do my eggs (which I love with those pans) and meats. But the idea of maybe using the Dutch oven also as a slow cooker appeals to me and I do use a fair amount of tomatoes. Now do I go Staub or Le Creuset. Oh decisions decisions. Thx again

  • the regular dutch oven works great for deep frying and it makes the for a real good seasoning of the pot itself. I have been told to deep fry in it instead of coating in oil an seasoning in the oven.

  • do you have to boild the potato at all before you cut it up and fry it in the oil? Please let me know

  • No you do not boil before you fry. Just cut up the potato and then fry it.

  • man i can never fry potatoes. i always butcher them completely and they taste horrible. theyre never crispy and always have some nasty kinda sweet taste to them.

  • Might be using the wrong potato, or the wrong oil, or your potatoes are too wet.

  • Maybe your potatoes are not fresh, because if they get too cold (it depends on where you live), they turn kind of sweet. At least in Lithuania :D

  • LOL...this brings back memories. French fries is all I used to eat back in the day. A big plate of fries all to myself with LOTS of ketchup!! I used Creole seasoning. Haven't made them in a while...I think I'm gonna try that ultimate chicken recipe :-)

  • In Ohio we fry potato wedges with a seasoned flour mix and call them Jojos.

  • That's funny, I'm in British Columbia and we usually call 'em "Mojos"......I do them in the oven with just a coating of oil.....ALMOST as tasty/ less fat.....But Damn these look good!.....

  • it was just some sprinkle of water I used to see if my oil was hot. JUST A DROP of water to see if it crackles and pops DONT EVER PUT WATER in HOT OIL!!!!

    I caught you a few months ago after buying a 12" cast iron skillet at a garage sale. Really appreciated your instructions on keeping it seasoned, showing what to cook in it, etc.

    Wish I had smaller skillet... but that's besides the point.

    I seem to recall that you had a video with the recipes/instructions, which I don't see.

  • I can almost taste them. Crispy on the outside and soft in the middle. Bring out the ketchup and go to town. Store bought frozen potatoes can never replace these. I like to do them this way when I fry fish.

  • You da man, Dave! I appreciate how you show the versatility of cast iron, like how you show the world a dutch oven can be a handy deep fryer. With your baked beans you showed how a dish cooked in a dutch oven can be started on the stove top and finished inside the oven. That's versatility. I love my dutch oven too. Everybody should run out and get themselves a new Lodge dutch oven or buy an old Griswold or Wagner dutch oven on Ebay.

  • You can reuse oil. Just filter it through a coffee filter or paper towel and keep it in the fridge in a canning jar. You'll end up having a perpetual jar of once-used oil, but it'll work just fine; your flavors WILL blend a bit though.

  • Great video, Dave. Just remember to listen, people.Too many potatoes in your kettle/pot/whatever at one time, and its grease soaked, undercooked fries. Get your oil too hit, and you get carbon on the outside,raw potato on the inside.Oh, and a nice fire if the oil bubbles onto your heating element/fire. Found this out the hard way a couple times. And JeffreyRodriguez, right on. You can use the oil a couple times if you filter it properly, and never let it get too hot. Big fries for the win. :)

    One of the ways to cook potatoes in the mediterranean way :

    cube potatoes and an onion , fry them in medium heat oil (toguether , the objective is them not to be crispy but tender ) beat 4 eggs and add salt , drop the potates and onion in there , mix , and make an ometlet ! u will lick ur fingers! great hot and cold

  • welcome back!! I cook them almost the same way. Wife likes the skin but she wants them small. Sometimes I slice them like chips and fry them kinda crisp. Kids love them like that.

  • Oh Man that looks sooo good, Dave! I've never tried deep fry cooking ever, for two reasons:

    My family had members with high colesteral, so my mom never deep fried anything ever, so I never really learned how. Also, my grandmother burned down her houes back in the 1920's when a pot of oil ( prob. was lard back then) got too hot on the stove and exploded. So now I'm afraid to even try it!

  • Yes, it's actually rapeseed oil. They decided the word rapeseed wasn't too great for marketing purposes so re-named it Canola. Rapeseed is grown in Alberta, where I live.
