No kidding much more thorough! I've watched 4 or 5. By far the best, Especially taking out the bone between the chicken breasts and cutting the oyster in.
I think this is the best demo video ever for cutting up a chicken. Watched it over about 5 x's to make sure I didn't miss a thing. Thanks, I will follow this method every time!!!
wow,,,!! he simplify the cutting it looks easy already to cut and portion a whole chicken thanks for this video i will follow what he did, in my up coming assessment :)
you did a good job but you holding knife cut with thigh backwards. Watch my video. there are many ways, but I can cut up a case of chickens in less than 3 minutes, so I thought a NYC butcher could give you a hint or two, but great job.
I don't know about "Boring" (must be emiril with too much time on his hands) but I just finished watching 6-7 videos on this subject. Wanted to get different views. This was by far... the best. Great explanation/presentation.
I just used these instructions and it was super easy! I was really intimidated with the task of cutting up a chicken but then I saw this video. Thanks so much for posting.
wow ,a great video. i saw many others but your demo and instructions are precise, clear and to the point, without wasting time. Video has great quality too. Am going to follow it exactly n cut the chicken now. thanks IAN, feel confident now.One query- lots of recipes say chicken breast halves-can you pls do a demo of that too, does it mean c-b is sliced lengthwise or widthwise?and what about the tenderloin, it just comes apart.( Shobhini from INDIA)
Thanks for the great video. I have heard recipes call for chicken cut up into quarters (4 pieces) and eigths (8 pieces). I have also heard of chicken recipes call for a chicken to be cut up into ten pieces. Can someone tell me what are the two pieces of the chicken that I'm missing? Thanks a lot.
Thank you! This video really explains everything well. Best of all, I know now that I don't have to use the scary cleaver and how to section the breasts properly.
I knew how to cut the legs and wings off, but wasn't sure about how to cut the back out and separate the breasts. So I found your video, 1st one listed! And wow, did you teach me a couple of neat tricks! Thank you so much for making this video.
I love to cook but I haven't had to cut up a whole chicken in about 5yrs this chef was very helpful and any other cooking question I have this is the person to ask!!!!!!!!!
@concon9326 And you came to this conclusion how? Why would it matter to you if he was? Does that make the lesson less effective? Or are you just a homophobe? Studies show that the people who are most homophobic, also have the strongest homosexual tendencies... :D
Finally a video with clear and uncomplicated instructions to break down my chicken. I have struggled for years. Wish this video had been on my radar before.
Agree with Bobcats110 - good instructions (not too wordy - which I hate) and good camera shots. I just cut up my first chicken correctly (previous attempts were ugly) - thanks Ian!
I'm taking a culinary class in my first semester of college. I need to cut up a chicken just like this for my final exam. However, the chicken must be cut french breast. If anyone can find me a video on that or simply tell me the difference (in detail would be nice), I'd be very grateful.
This is an example of how all cooking videos should be produced. Clear, direct and accurate. No surprise that it's from Gourmet. So sorry to see you go, but these experts, like Ian, should have no difficulty landing on their feet.
It can be a little tricky to find that cartilage around the breast bone but you make it all look SO EASY! Thanks for a terrific lesson! You're a great teacher. Probably best to have a damp towel nearby cuz' raw chicken can be SLIPPERY! (As I learned the hard way - lol) Thanks!!
Check out the yellow skin! That's some free range organic bird there.

From following this guide, will there be any bones left in the breast? Because I kind of hear the knife slicing into bone.

@cha0tic -- I think what you are hearing is him cutting thru the wishbone. and that's a small easily broken bone.

what has been done to the skin/bird before cutting it up?

@Abunchanada The bird looks dense to me; so I assume he's kept it in the frig for a few hours to air dry.
