  • thank you for teaching me to make my brothers favorite korean food! If you don't have a barbeque, the next best thing they found was to put it on a baking dish and broil it in the oven. You get better carmelization than pan frying. Oh gawd, i love galbi! keke :P

  • In my opinion, LA Galbi is not the same unless its cooked over a coal fire. Something about the smoke...

  • Hi Aeris.. I tried your recipe today.. turned out pretty good.. although the salty and sweet taste was quite strong.. maybe it had something to do with me leaving out the minced ginger and green onions..

  • @netnoob77 Yeah it sounds like you may have left an imbalance leaving out those ingredients. I think both of those ingredients are supposed to deliver another dynamic diffusing its sweetness.

    Because we believe that.. blood from meat is not healthy to eat.. so if you soak the meat in water, you can get rid of some blood ..not all though.. and that way you can get rid of some bad flavor of meat also.. thanks

    for tender meat.. it's good to cook it not too high.. so start with medium.. and later increase it to medium-high.. and high.. like this.. ^^

  • nooooo, my mom said youre not supposed to get rid of all the blood like that.. she said she did that when she was young and it turned out tasting.. not so great.. youre supposed to just wash the meat under running water to get rid of tiny bone pieces that may be stuck on the sides of the meat..

  • Amazing music, amazing recipe.

  • I did this recipe this over this weekend using chicken breast, sliced into chicken fingers. I put the chicken on the bbq and used a little roasted pepper olive oil too moisten the chicken and it came out extremely good. This is just a great technique and it's the best version i've seen online, with the 3 separate, important steps, of soaking, onion/pear, sauce marinade. It makes all the difference in the world and imparts a delicious flavor that I've only tasted in the most high end restaurants.

    yep.. that is another style.. actually for grilling... this soy sauce marinated rib is more common in korea..

  • I have kept the pomegranate and agave versions separate and what I can tell you is one of them tastes much nicer than the other, although both are good. the problem is every time i put two ribs on the grill i forget which one was pom and which was aga... i plan on checking more carefully tomorrow morning as i have plenty left still marinading... i want to see how long they will last nearly finished needing only browning on the grill for a few minutes to finish. (like the restaurants do it)

  • @aeriskitchen I made pork ribs. i changed a few small things and they came our SUPERB... absolutely great... I took a picture and put it on facebook. send me a direct message for the link... What I did was instead of using unhealthy refined sugar I used Agave nectar for 1/2 and Pomegranate concentrate for the other one as a substitute. I also used more onion because i remembered the quantity wrong and used a whole onion instead of 1/2. I par bbq'd the ribs with pepper/salt 90% done first also.

    I just researched what "brine" means. I didn't try that way before, so I can't tell the result with confidence..however, it seems like it's a good tip for cooking. sorry for poor answer.

  • @aeriskitchen you can find comparisons of brined and unbrined meat... usually it cooks better after brining because the salt pulls excess water from the meat, which can detract from the cooking process... I am now trying your recipe here and I had no choice but to leave the ribs in the onion pear mixture overnight... but this morning i'm putting it in the rest...also par-cooked the ribs a little to shorten the cooking process. i'm not sure what will happen because of all the changes i did... i

  • @iamafractal There would be no reason to brine as the pear-onion and marinade mixture are basically doing the same thing. A brine is only worth doing on a large piece of meat and or poultry like a turkey or pork shoulder ect ect. On another note this a great video, thanks for sharing.

    just cut the recipe half..and make less galbi.. or.. you can marinate...and freeze them.. before cooking..and whenever you want to eat.. just grill or fry the galbi.. You can replace the cooking wine to water if you don't have it..

  • This is really the traditional way of making galbi in Korea and takes a lot of time in this way. Usually a lot of Korean dishes require patience and time like we don't just use the meat but get rid of all the blood and soak it with pear juicies. Crazy but My mother spends over 1 hour making breakfasts and dinner evryday. ;-)

    Regular pear has different texture and taste.... so i don't want recommend you that.. maybe if you really want to add something.. sweet apple will be better to replace.. but Asian pear is the best for galbi..

  • @aeriskitchen Yeah to me an asian pear tastes much sweeter than our kinds of pears.... I could definitely see why asian pears would be hard to replace though, I enjoy eating them on their own more than our pears or apples.

  • @MrKeflyn hey, an easier way to make the meat is mix brown sugar, pepper, fresh minced garlic, sesame seed oil, green onion, in with the meat, let it marinate for a couple of hours, then bbq it!

    one of great flavor for this food is.. sweetness.. so yes.. you can use pear juice..but they are not sweet enough.. you can use honey..but don't want too strong honey flavor in your galbi.. what he uses to substitute his sugar ?? maybe you can try that ...

    I thought it was too light on the saltiness so i added a lil more soy sauce, ended up a lil too salty instead. I think my pear wasn't sweet enough cuz I don't really taste any sweetness despite the added sugar and honey, I guess I'm just a bad cook. Lol

    Probably bad taste buds.
