I like to use honey instead of olive oil, then wrap them in foil and bake them on a bed of kosher salt. When the beets come out of the oven, use the foil to rub the skin off. It acts like sandpaper, and helps keep some of the beet juice from staining your hands.
Red onion and orange would be a nice addition. I find that if you have fresh ingredients from the farmers market your recipe can be very "plain (I'd say "simple) and still be full of flavor. Thanks for watching!
You do not need to preheat your oven for roasting vegetables. Save energy by heating your oven and beets together starting with a cold oven.

Simple cooking is best, it allows you to celebrate and appreciate your food, and even in fine dining few dishes are overly complex.
