That surface is actually the bottom of the head (the surface that mates to your engine block.) The idea is to make the surface PERFECTLY flat and very smooth. If you look at cut #1 you can see that although the cutting bit orbits in the same plane, it cuts more in some areas than others (wasn't flat before). Having a perfectly flat surface ensures better sealing with the block. This has many benefits. Also, i am using MLS HG which requires a very smooth surface which this machine can deliver.
