Yes, Aluminum is a little tricky. It is an excellent conductor of conductive heat (this is why we cook with aluminum cookware) AND an and excellent reflector or radiant heat. (this is why we put foil on top of a turkey to keep it from burning on the outside before the inside of the bird cooks) Aluminum is only surpassed in the ability to reflect radiant heat by Silver & Gold.
