i think it need more cooking and if you over whipped your eggs don't worry just give it 2 min and it will fall to soft peeks

I would recommend chilling first, then removing from the pan, and then freezing.

I never made this cake with white chocolate. The consistency might change due to less fat with white chocolate. Good Luck!
