Red meat, not white meat. White meat (pork/ poultry) is best cooked through and juices run clear. Primary reason 'bacteria' and will make you sick. Pork can be cooked with a bit of pink (nowadays anyway).
Red meat (beef/ lamb) is best medium and some folks would say rare (me too at times). The bloodier (juicy) the better.

Hello gorgeous ribs, care to tease me more? Looks amazing. Would the peppercorn mix in your earlier vid be good for something like this? and can the marinade/or even rub work well with other tender cuts of meat?
The tequila can break down meat fairly quickly (just a tequila thing). So it is best with the ribs and not marinaded too long. The sauce can certainly be used for any meat, try chicken!
Peppercorn blend would work really well with the other seasonings. cheers, KtC
