  • About potassium sorbet it does not stop fermentation it keeps it from starting

    If you have potassium sorbet in your juice make sure to put food in your juice make a Yeast starter bench With the same type juice our sugar water let it go

    two days and add it to your juice it will work

  • @peligro28 I wouldn't unless you're kegging. You need yeast in bottles to carbonate. Clear that out and it won't carbonate in bottles. For kegging, it's magic.

  • I had a question. I made some peach wine, but it is too sweet and does not have much alcohol. Maybe about 8%. I used regular yeast to make the wine. Now even though I have racked it and its been in bottles over 6 months, can I pour them in a container add better yeast and restart the frementation?

  • @gunmadkiller First of all get a hyrometer. They are $6 and they are a must have if you want to do things right. Also its hard to get wine to 20% as most wine yeast will die out at around 14%. Thier are acouple though that can get to 18% To get thier you need to syrup feed your wine.(read up on that) To get to 20% you need a total of 35 cups of sugar or 15and 1/2 Lb of sugar(2.25 cups of sugar=Aprox 1lb) added in stages. Unless your making a dessert wine 20% ABV will taste like shit.

  • When I make wine I never Monitor the Temp. Just make sure your in the low to mid 70's and your fine. Colder then that and you will slow fermentation, but slow fermentation can be a good thing as you will get better tasting wine

  • @chino4644 To make a port you need to stop fermentation when the ABV reaches about 5-6%ABV then you add Brandy or Cognac to bring the ABV to 19 or 20% then add sugar syrup to sweeten. You might also want to bulk age if for a year with french oak cubes. This is how Port is made traditionally. Only thing is when they fortifie it they use Neutral grape spirits or basicly 98% alcohol made from grapes. Since thats almost impossible to get use brandy which is distilled wine

  • @snuviddz Yes, that is correct. My last kit said to do that as well. It also came with two yeast packets and said to add them both. Always fallow the kit instructions.

  • @zake20042005 Oh, I'm not running out right now, but new ideas are always welcome. The problem with Mead is that I can't find a cheap source for honey. It's pretty expensive.

  • @Forbidenangel0 Yes, there are yeasts designed for wine but I've used ale yeast to make hard apple cider and it doesn't die early.

  • Wife made me clean up a bunch of stuff and I think I threw out my electric filter system still have my corker ; have you ever thought of freezing the wine to a crystal then spin it and add the raw alcohal to a new batch it removes the water and you get the syrup and WOW.

  • @MrMrtiki Thanks. The bottle washer should be available at any home brew shop, either online, or local. Yes you can spike your beer with some booze at the end, but only just before you drink it, otherwise you might kill the yeast and prevent carbonation.

  • I bought 1 liter of grape juice can (15.8g of Carbohydrate in 100ml – didn’t mention sugar) & added 500ml of water, half a cup of sugar and 12g of dry yeast. Capped with a sterilized balloon. Pinched few holes.After half an hour it started fermenting and the balloon was upright. This was on 11th Sunday. After 3 days, it’s today 14th Wednesday the balloon kind of drop down but still popped a little. I can see there is some fermenting happening yet. But it’s only three days. where did i go wrong?

  • @manjumas I see you didn't use any yeast nutrient. I wonder if your yeast ran out of nutrient. Boil some rasins in a cup of water to make a tea by boiling them for 15 mins. Crush the rasins with a fork to get all the juice out of them. Let that cool and filter it into your wine. Shake. You should see it start up again. If not, add a half a pack of yeast.

Just finished a calafornian connasior white zinfandel rose wine, it was a 4 week kit and i filtered at the end with a harris vinbrite wine filter i could not believe how good the end result was! also done a coopers european lager which i kegged and it didnt last long when it was ready lol! loving the vids, keep up the good work

  • hey craig, i really enjoyed your beer home brewing videos and marveled about how easy you made it. I noticed that your wine video was a bit more complicated. This is what i did to make wine, and i think it came out pretty good: I use grape concentrate first of all. I use two cans of grape concentrate for 1 gallon, so in a 5 gallon bucket i use 10 cans of grape conentrate.

  • Sure. I don't know where you live but I just put a link in the info section to a great site that sells everything you need. The link will take you right to their site, and it helps me out too.

  • Start off simple (do it yourself items)

    try a food grade bucket with lid (acquire from restaurant?) Pickle barrel? Don't use anything from soap or chemicals (food only)

    make your own airlock by shaping pipe in an S shape (filled with water) allows air to bubble out but not back in

    Look around at items required and fashion your own from items other people might throw away regularly

    I built my entire assembly from buckets

    a turkey fryer propane burner

    you get the idea

    Quick question though about storage. Is it ok to keep the wine outside in a shed while it brews or does it have to be kept at a certain temperature. It gets quite cold here at night very often below freezing.... Cheers man.

  • It definitely has to stay in at room temp. It will fail out in your garage. Thanks for the comments.

  • Just wondering where do you get a siphoning tube with that easy draw attachment instead of inhaling and spilling. With my red 23L must in a carboy I'm going on 5 weeks of fermenting now (a little airlock action every 40 min still). Should I rack now and top up anyway and add the sulphide.

  • Yes, rack now and prepare to degas, clear and bottle. I never top up, by the way. it dilutes the wine. Add the sulphite and degas if the instructions say to. prepare to clear and bottle. I get my supplies locally.

  • Topping up with a commercial version of the wine you are producing is highly recommended by the wine makers I've talked with, and won't dilute as you suggested. I've learned, for optimum results, it's important to minimize the amount of air your wine comes in contact with.

  • Mine seems to survive without topping up. My first racking is done before fermentation is done, so a CO2 cake forms in the air space, protecting the wine. After the second racking, the potassium metabisulphate goes in, which protects the wine from oxidation. The instructions say not to top up.

  • Okay, no topping up during fermentation. But topping is recommended if the wine will be aged on oak or left to settle in the carboy before bottling. When CO2 is being produced no topping is required. You're right.

  • Well, I still don't top up at all, but it only sits in the carboy for about 8 days while degassing and clearing. Even with the red wine, I've never had a problem. :)

  • Well you don't get a headake while drinking it. It's a pleasant buzz, but not with out it's natural effects. Home made beer and wine will give you the cleanest type of buzz you can get. There are no side effect from any chemicals. However, it is still alcohol, and especially with the wine, if you're not careful, you'll wake up feeling quite round. There's no free ride, sorry to say. :)

  • There are many thousands of different types of yeast floating around at any given time. You do not want any of these involved in the fermentation of your brew. They are what rot your oranges, and turn your bananas brown. You have to rid your brew of all these contaminants and infect it with only the one YOU want, the yeast that comes with it. Sanitizing is necessary to guarantee a successful brew.

    I 4 gal of concord grape, 5lb of sugar (usually 4) and 1 1/2 tsp of common yeast. I. The temp in the house doesnt get above 75. I keep it in the dark in a closet. This method has done fine before. I added the extra lb. of sugar to make it sweeter. Its sat for 1 week. Ok bubbles. Its slowed down a lot. More than normal it seems. The alcohol is low to taste. Should i add more yeast? I read somewhere to add lemon juice to restart it. thx for your time.

  • I'm not sure what to tell you here because I don't know why it stopped fermenting. I would think that adding more sugar would start the fermenting since there should still be live yeast in there. Have you done a hydrometer reading? That would tell us if it's done fermenting and just needs more sugar to up the alcohal.

    I was just wondering if i decided to use those heat seal bottle caps, when should i apply those to the bottle, after the corks have sealed 4 days post bottling?

    Also i have some hard cider going and i was wondering if i could add come Metabisulfite to kill off the yeast so it would stop fermenting and have some sweetness to it. Once again great series, i look forward to my first chardonnay!

  • Yeah, you can actually do that. Some people use Sorbates to slow the fermentation down but I think Camden tablets would do just fine. I would remember that since it is going to kill EVERYTHING in there that you had better do something with it (IE: Bottle) shortly after the tablets are out of effect... it'll be ripe to pick up an infection with no good organisms maintaining dominance in the wine.

    Its not terrible, and it will get you drunk, but it does not taste great, and i found it quite boring.

  • Well you could use those things but it's not going to look or taste anything like decent wine. If you're just looking to get drunk, go for it. I turned apple cider into "wine" but it ain't real wine. Do you really think that concentrated grape juice has the same quality grapes as a wine kit? Not even close. But, you can do it, and you may be very happy with the results. It just won't taste like real wine.

  • I think the comments speak for themselves. It seems that you are in a minority and perhaps the problem isn't with the video, but with you. Explaining things in great detail means that people need to ask less questions, since the info is all there.   • I'd go for the smaller one. Less head space means less air exposing your wine. Plastic or glass is up to you, it doesn't matter. I prefer glass, but that's just me. If you can get glass, that's good, but plastic is lighter.

  • You will be successful at making wine, but I'm not sure that those juices are derived from the same type of grapes that wine is normally made of. You will, however, end up with wine and I'm sure it will taste quite good.

  • Unfortunately, I'm the wrong guy for these questions. I have never brewed any other way than extract brewing, which I show in my videos. You need to find someone who brews from grains.

  • you said you have 1 liter of worth and added 3 liters of water. You can only do that with extract brewing. reason why your brew was waterly and light. you did not sparge. poor sanitation could be the factor of sour taste but i am only guessing.

  • 7, i noticed the first bubble after 15 minutes of closing the lid and the last one after 4 days. It is summers in india. room temperature is 30 deg and no AC.

    8. i opened the lid today and tasted it. i drank 660 ML. kick was good. color was exactly same a LEMON JUICE. no where close to transparent. tasted sour. I also did not get any foam while filling the bottles.

    what has gone wrong? i had expected the outcome to be dark brown in color. how can i get it.

  • 3. I warmed 5 liter water to 70 deg cel and put the entire flour in mosquito net and immersed in water.

    4. the entire water was soaked by the malt. leaving me with only 750ml to 1 lit of brown liquid.

    5. i added 3 lit water, one kg sugar and boiled it for 1 hr. the wort was quite thick, dark brown. i did not get the foam. there were bubbles with very less life.

    6. cooled the wort, added water and yeast. closed the lid.

    Video is wonderful. I bottled my first batch today. I tasted one of the bottles. Though the kick is great, there is something fishy... my beer looks like lemon juice, and my friend called it toddy..please analyse what i did.

    1. soaked 2 kgs of barley and .5 kg of wheat overnight. next day, i let them germinate.

    2. when the root was 3/4 of the length of kernel, i roasted the entire thing to greenish brown and ground it in flour mill at the most coarse setting.

  • Don't rinse sterilized equipment. It defeats the purpose.

  • You have to rinse Sodium Medabisulphate off of your equipment or it will kill the fermentation. It is a commonly used agent. If you are using tap water to make the brew, as most people do, what's the harm in using the same water to rinse?

  • Hey Merd. The bentonite is listed in the instructions as follows: "Packet #2 Bentonite: Helps yeast activity and removes proteins." I think it pulls the proteins down to the bottom, which I assume is part of the clearing process. Package #5 is just referred to as, "Fining Agent - Removes proteins which results in a clear, stable wine." It's a liquid. I don't know what it actually is.
