Car for example, I see people who are driving cars that were made by a robot. What is that about? Or people buying soap. Make your own from scratch, how hard is it to dig a few minerals to synthesize sodium chloride, sodium silicate, magnesium sulfate. You bunch of lazy farts....

  • @chuchichaeschtli Nope. The corn syrup inhibits crystal formation. You'd get marshmallows with unappetizing grainy shards without it. If you absolutely can not use corn syrup, use a different grain syrup, preferably Golden syrup, which is the closest equivalent. Though the different sucrose/glucose levels and taste make substituting unwise, it should be ok for at home purposes. Don't use honey.

    If no one has explained it to you yet, here 'tis:

    240 is the "soft ball" stage in sugar cooking.  Sugar syrup dropped into cold water will form a soft, flexible ball. If you remove the ball from water, it will flatten like a pancake after a few moments in your hand.

  • this is a simple and nicely done video. were your marshmallows very elastic, in that, after handling them (cutting, coating with cornstarch etc.) they retained their shape? i just made marshmallows (using xanthan gum instead of gelatin, plus egg whites --totally diff recipe than yours) and they're softer and pliable than i would like. anyway, i think i'll cease my opposition to gelatin and try your recipe!
