this is a simple and nicely done video. were your marshmallows very elastic, in that, after handling them (cutting, coating with cornstarch etc.) they retained their shape? i just made marshmallows (using xanthan gum instead of gelatin, plus egg whites --totally diff recipe than yours) and they're softer and pliable than i would like. anyway, i think i'll cease my opposition to gelatin and try your recipe!
