Look, this is probably just a demo video where only he eats the cinnamon rolls, so he can cough and be unsanitary all he wants. Are you eating the cinnamon rolls? The only point of his videos is to teach you how to make them, and that's it. However, you can make another lesson of your own from this video, and that is to cough in your hands, and NOT touch the dough until you've washed them again. He'd wash his hands if they were being served to people other than himself. So be quiet, all of you.

ACTUALLY... If instead of throwing them in the oven right away, you set the pan aside covered with a clean linen towel to rise, then bake them. AND if you don't have a dough cutter, plain unwaxed, DENTAL FLOSS makes it really easy to cut the dough log. Simply lay the log over the floss, cross the floss over the top, and pull. Slick as a whistle.

you can just use a clean thread put in under the rolled dough, then cut the dough out.
