Wait untill they throw a punch, then press A (X) , (you can button mush if you want to) then you will see luis dodge his punch (it might take a few trys). Right after you press A (X) and he dodges, press Y (Triangle) and he will take their weapon.

it was the final round and i was low on health. the first guy came at me with a knife and started slashing away. i was low on heath and luckily did a counter and took his knife. i slashed at him and the person after. the final person went on the ring. low on heath i frantically stabbed at him. i cornered him to the edge of the cage and was finally gonna get the bear fight achievement until...
