The second to last one you start out with a steep slope then just completely bypass it...i can do that without a horse. But i do get what you are saying

I've been doing this without the horse for 3 games now. Although i don't get that wonderful horse hoof sound. Whirlwind sprint helps too. As for going down mountains, become ethereal and unlimited shouting exploit helps. (on xbox using exploits on game mechanics i found myself to get unlimited shouting)
