2 things... 1. You say that it's AC, okay fair enough, what's the frequency then? And is it steady?

2. In the beginning you switch the multimeter between Volts and Amp measurements... wired parallel and in amp mode would create a short, and since nothing burned, there's almost zero to nothing power in there.

the plastic tub is insulating your setup from the earth. The whole point of an earth battery is to be connected into the earth. Grounding rod with a grounding wire?

Did you try about a tablespoon of honey to the mix? reference to a lady back in the 30's who added this to her mix for organic compost. I think you were using a similar composting mix to the soil yiu used; right? Would be interesting to see the effect.

Why are you taking an AC reading? These are batteries. Batteries are DC. If you looked at this on a scope, you should see a straight line. AC requires frequency.

@darksideofthebrick13 sorry but this is not fake at all i thought yea right aswell but from just a glass of water a bit of copper wire and a screw (galvanised) i got 0.8 volt 4 galsses of water just under 3 volts aing the screw in the ground outside my front door and placeing the copper in another hole made with a screw-driver then crushed back in i got just as much as 1.23 volts i dont understand how you just try it! will post a video of it all as soon as i get the chance to do it againe.

try using non magnetic stainless steel outer cylinder and a soft iron core, the soft iron will decompose but the stainless will not. make sure your stainless isn't magnetic. I am going to build some 6ft tall batteries this way, I can reuse the stainless forever i just have to replace the iron cores, 6' tall by 1 ft diameter stainless pipe, use PVC caps at both ends, top cap has a hole in it to insert Iron core. sell back to PG&E

I wonder whats the lifespan of a average grade copper in average Ph soil, does size or shapes of metal greatly increase/decrease power ouput? have you experimented with any larger scaled versions of this?

What you are measuring is called a galvanic reaction, the metals are giving up electrons to the soil (rusting/oxidizing) and that is what causes the flow of electrons, this can be used to advantage to protect a metal tank above or underground with a Sacrificial Anode.

If you do a search for: "Galvanic Scale" it lists materials and the further apart on the scale they are the stronger the reaction, this will give you the most powerfull flow, (dont use pure aluminium, only Aluminium alloy)
