The Stig is, whoever fits the task the best probably. If they do an ep about rally, they get a rally driver or if they are on a foreign track a driver familiar with it does the job and so on. I would guess, that in many cases, the companies prefer to send test drivers themself on the track. In one ep of the current season a Ferrari, which was developed with instructions from Michael Schuhmacher, was actually driven by the man himself.
