It was implied that the machine WOULD have been able to make the cider at a decent level of quality, they just turned it off for that competition. And don't forget that the brothers implied that they already have a supplier of apples somewhere else in Equestria, so the Apple Family not letting them use the apples at Sweet Apple Acres wouldn't have changed anything, they still would have put them out in the cold for the winter if they competed directly for cider season.

Yes, on one day, with all of them working themselves to the bone, with 5 others helping them, they were able to just outpace the Flim Flams. But they wouldn't be able to keep that up everyday. The other ponies have lives, and we've seen that on an average day with the four of them working at a reasonable pace, they wouldn't stand a chance against the Flim Flam's machine in the long run.

You say that they could have gotten help. From where? Again, these other ponies have lives and jobs, they can't spend their time bucking apples to help somepony for nothing. I mean, if there was a mom & pop store on the corner of your street that was down on their luck, even if you felt sorry for them, I don't think you'd quit your job and put your life on hold just on the off chance that you might be able to get them back on their feet.

But do you really think the Apple Family would be willing to leave it up to chance, that MAYBE the rest of Ponyville MIGHT be charitable and help them out after the Flim Flams start stealing all their business? And although AJ has learned a lot about accepting help from others, I'm betting the Apple Family as a whole is a proud and independent one, and would not want to be getting by on what is essentially, welfare, provided by the town.

If they didn't, the brothers would've just sold cider at a cheaper price than the farm would be able to compete with. That's exactly what companies in a capitalist society do, run the competition out with lower prices, then raise them once the competition is gone. The brothers were willing to sell 2 cups per cent, which was much less than the Apple family was selling for.
@ShadowBlastAlpha They didn't outright bid the farm, they bid the rights for cider making. However, the farm needed the money from cider to last the winter when they can't produce any income. Without that income, the farm would've been forced into foreclosure for not being able to pay its taxes. Of course they could just sell the apples, but I assume cider has a much larger profit margin.
How were they being stupid? The episode already established that it would be bad if they either joined up with them or competed with them directly, so rather than choose either of those, they pulled a Jim Kirk out of the no-win scenario and took the third option. By agreeing to this competition, they'd only have to train and work hard for this one day to beat them and get them out of their lives forever. Of course, they failed because they underestimated the power of the Flim Flam's machine.
@toxicXmouse People who disagree with my opinions probably. But that is to be expected because I clearly showed my dissatisfaction in this episode. It's all good though, people are allowed to show their options after all. I just hope the show's creators go back to their roots, so to speak.
This show is for grown men. Why ate children watching this?

Think I might be able to clear up some things.
1-Their cider was apparently good due to Granny's reaction during the song, it went bad because they turned the quality controls off.
2-They said they would just buy the apples elsewhere and sell the Cider in Ponyville, which would still hurt the Apple's business.
3-They only produced so much due to their friend's help and they're working full tilt, not something they can do all month..
4-AJ didn't learn anything, she already knew the moral.
