I don't think there is any intrinsic problem with 'tapsilog' as something representative of Filipino cuisine for this program. I for one love tapsilog as an all-around comfort food. My only problem is the venue. There are better places for it. Maybe a home-cooked version or something. Even Tapa King (a local franchise) looks to have a more authentic feel to it, since at least their meat isn't bought at the local wholesaler for extremely cheap. Just a missed opportunity, is all.
