@mutmutalfri : Terima kasih udah mencoba ya mbak :) Kalo minyaknya jadi terlalu banyak, coba kurangi minyak untuk menumis soalnya santan berubah juga jadi minyak kalo dipanasin terlalu lama. Alternatif lainnya bisa juga dicoba gunakan santan kalengan yang 'light'. Tapi kalo saya pribadi, saya sisihkan saja minyaknya seperti yang mbak lakukan tuh, trus minyaknya saya pakai untuk tumis, mayan enak lho :)

- Use less oil at the beginning or you can skim off the oil when rendang is cooking. You can use rendang oil to stir fry or make nasi goreng, its much like aromatic cooking oil.
- Cook in low-med heat. Rendang has tendency to burn out so watch closely. When water evaporate turn the heat to low, stirring occasionally.
- Rendang need a lot of patience, i cooked mine about two to three hours.

The Reason why the meat is tough isn't necessary because you are using the wrong type of meat,you just need to cooked them longer ,you will need to cook it at least an hour long,in this case you will need to add plenty of water,let it cooked in low heat,until all the water gone/soaked up.good luck with your experiment :)
use a nice Stewing Steak and cook it slow (i take about 3-4 hours at least for 500grams, thats to reduce about 1 and a half tins of coconut milk). And i do it on a nice low heat
Hey my parents are West Sumatrans ( Bukit Tinggi and Pariaman) lived there like princes cause i grow abroad i knew nothing bout the culture so they teached me some like cooking this " Rendang" and the traditional way you don't use the cooking oil but first heat up the pan with low fire and put the fresh coconut milk and after the paste ingredients and after the meat and the cooking time needs bout 3 hours with low fire and we did in our outdoor kitchen close to the fishpound... in open nature:)
Everyone is right. There is no right or wrong recipes, it really is depend on your taste bud. Using oil or not is just matter of preference and cooking methode, i am sure both are having a great result :)
I am amazed that so much oil is used. If it is to thicken the sauce I would have thought it better and more authentic to use grated and toasted coconut.
well everyone had their own recipe for cooks Rendang but obviously this is not original Minang / Padang rendang....
FYI Minang / Padang's Rendang never...never ever using oil or stir fry the spices - paste - but you do whatever you like as long as you like it.
