Its a shame they dont allow races in big winds any more. I love sailing in this kind of stuff and usually go out when my yacht club cancels races. Once you get above 30 knots the technique to handle the gusts dosent change that much. Its the wave action that usually gets you into trouble.

Ive been out with my H16 in steady 35kt wind, flying only a reefed mainsail, stayed out for 30 minutes and got the hell off the lake.

70 knots gusts... Sure... In that wind you don't need sails, and using them is a nice and fast way to suicide.
