Sorry, didn't mean to jump in all douchy. Your method is great fun to watch and a nice technique but not everyone wants the bitterness of the yeast in their wheat beers. In Bavaria it's common to serve the bottle alongside with the customer deciding whether or not to add it. Cheers!
It's best to serve the beer without stirring up the yeast and save it in the last inch or so of the bottle. Then serve the bottle with the glass, letting the customer decide if he/she wants it added.
the bottle of bear have germs!!! I don't want my beer contaminating with those germs...
